Martina typical products, like: cheese, cold meats and salami (expecially
capocollo), bread
and similar products, wine,
olive oil and pasta, are
internationally known because of their quality and genuiness. |

In recent times, Martina entered the “Slow
Food”net. “Slow Food” is an association that increases the value
of typical agroindustrial products. Among the local products
awarded by “Slow Food” great importance is given to capocollo
and strong ricotta cheese, that will soon be qualified as
protected products.

OVEN PRODUCTS: bread, frise and taralli.
Martina tradtion asserts that the frise, before being
eaten, should be softened in cold water and then dressed with
tomatoes, olive oil, salt and oregano. |

DRIED BROAD BEANS AND CHICORIES
In Martina cooking tradition, a typical dish is the one made
with mashed dried broad beans (they are mashed together with ¼
potatoes) and wild vegetables. Originally, this dish was cooked
in a pignatta, in the fireplace. It is often served with black
olives and green little peppers. |

ORECCHIETTE, CHOPS AND MEAT BALLS
The typical pasta of Puglia, called orecchiette (little ears),
in Martina are usually eaten for lunch on Sunday, together with
meat balls and small chops in a tomato sauce. |

many butchers’there and take a seat. You can taste different
